•Mezcal: Regional Alcoholic Beverage obtained by distillation –rectification of musts prepared from previously hydrolyzed or cooked agaves, which have been submitted to alcoholic fermentation with yeasts.
• Mezcal possesses a sui generis scent and flavor which is in harmony to its kind. It is colorless or slightly yellowish when aged in wooden vats of white oak or holm oak, or when it is smoothed (abocado) with no maturation process.
• MAGUEY (AGAVE): This plant belongs to the Amaryllidaceae family. It has long, fibrous and green elliptic-lanceolate leaves, which usable part for the elaboration of Mezcal is its cone or head (stem and base of its leaves).
